Roaster Thoughts

Cersei is a Yeast fermented coffee from the renowned Ratnagiri Estate produced with all the care by Mr. & Mrs Parte in the beautiful mountain range of Chikmangalur, Karnataka. For this Lot, the ripest coffee cherries were harvested from Catuai plants with an average Brix reading of 24.4 These cherries were triple sorted after which floats were removed. Then these cherries were placed in stainless steel tanks, While loading the cherries to the tanks it was inoculated with yeast that is specifically designed to enhance the flavour profiles of this coffee varietal. All the oxygen was then purged out of the tanks. The coffee was then left to undergo anaerobic fermentation for 72 hours. After fermentation the coffee was then pulped and mechanically washed to remove any leftover mucilage and was put on raised beds to dry.
Under the watch of The Commander Mr. Ashok, These coffees were dried under the shade, constantly stirring on the raised beds was done to ensure uniform drying.

This coffee was then rested for three months before being milled and finally dispatched to Koffie Genetics HQ in Bangalore.

The Aromatics of this coffee have a sweet Dry fragrance, mild tropical fruits & Red Apple. In the cup, the coffee has Medium body and is Brimming with Bright Acidity. Flavour Characters are clean with Stone Fruits, Grapefruit & Cacao Nibs undertones. With a Finish of Tropical Fruit notes, Toffee & Caramel.
