Submarine Fermentation by Harley Estate – Immediately after harvesting, the ripe coffee cherries undergo a 24-48 hour underwater tank fermentation process, post which the fruits are de-pulped and dried in raised coffee beds. Several physiological changes occur in the beans during this fermentation process, including decreases in water content and releases simple sugars, as well as the development of aroma and flavour precursors.
